Brief Introduction of Department of Food Science and Engineering

Department of Food Science and Engineering (DFSE) at Yangzhou University (YZU) can be traced back to the Department of Food Products and Manufacturing at YZU in 1983. Now, the DFSE is Food Science and Engineering Doctoral Degree Conferring Unit and the key discipline of YZU. The DFSE has four provincial platforms, including Jiangsu Provincial Key Laboratory of Dairy Biotechnology and Safety Control, Food Engineering Practice Education Center of Jiangsu Province, Jiangsu Yangzhou Modern Dairy Processing Service Center and Jiangsu Functional Dairy  Engineering Technology  Research Center. The DFSE offers three Undergraduate Programs: Food Science and Engineering, Food Quality and Safety and Dairy Engineering; four Masters Degree Programs: Master of Food Science and Engineering, Master of Food Science, Master of Food Engineering, and Master of Agriculture; and three Doctoral Degree Programs: Food Science and Engineering, Food Chemistry and Safety, Animal Derived Food Nutrition and Processing Engineering. It has nearly 500 undergraduates and 200 graduates currently. There are more than 30 staff in the DFSE, including 8 professors, 13 associate professors, 15 lecturers. More than 90% of them are doctoral degrees receivers. Since 2013, the DFSE has undertaken more than 20 research projects funded by the National Natural Science Foundation and National Science & Technology Pillar Program during the period of 12th Five-Year Plan; more than 100 research papers have been published in international journals indexed by SCI and EI. More than 10 monographs and textbooks have also been published. Great efforts is actively involved in the extension and application of research achievements which has brought great social and economic benefits to Jiangsu, Fujian, Anhui, and Guangxi Provinces. The DFSE has a broad international collaborations and exchanges. It has undertaken many academic conferences, hosted scientists and scholars from theUnited  States,Japan,CanadaandAustraliato give researches or to conduct lectures.

Undergraduate Program- Food Science and Engineering

Department of Food Science and Engineering at Yangzhou  University offers three undergraduate programs: Food Science and Engineering, Food Quality and Safety and Dairy Engineering. Some careers you might consider include:

Food engineers are employed by some of the world's largest and most respected private industry companies. They apply the principles of many scientific disciplines, such as biology, chemistry, engineering, physics, molecular biology, nutrition and microbiology to the challenges of food production.

Product developers find employment with many of the same companies as food engineers. Their job, however, focuses more on other aspects of food manufacturing such as consumer acceptability, economics, production feasibility and marketing. Developers also explore new ways to enhance nutritional value and health benefits.

Other typical job titles include: Brand manager; Corporate executive; Food technologist; Food scientist; Production manager; Sensory scientist; Technical sales representative.

Undergraduate Program- Food Quality and Safety

Department of Food Science and Engineering at Yangzhou  University offers three undergraduate programs: Food Science and Engineering, Food Quality and Safety and Dairy Engineering. A bachelor's degree in Food Quality and Safety will provide you with all the skills you'll need to succeed in a wide variety of food careers.

Some careers you might consider include:

Quality assurance supervisors work in private industry but also are employed by government agencies, and the Food and Drug Administration. They are responsible for reviewing safety and manufacturing protocol to ensure that the food you eat is safe and of the highest quality; to preserve and ensure the safety and microbial stability of food products by applying the principles of HAACP and GMP; to adapt and/or develop methods to analyze raw ingredients and finished food products chemically, microbiologically and sensorially.

Other typical job titles include: Brand manager; Corporate executive; Food technologist; Food scientist; Production manager; Sensory scientist.

Undergraduate Program- Dairy Engineering

Department of Food Science and Engineering at Yangzhou  University offers three undergraduate programs: Food Science and Engineering, Food Quality and Safety and Dairy Engineering. A bachelor's degree in Dairy Engineering will provide you with all the skills you'll need to succeed in a wide variety of dairy careers.

Students graduating from Dairy Engineering are able to:

Use their knowledge to anticipate, understand, and describe the chemical changes occurring during dairy processing and storage; preserve and ensure the safety and microbial stability of dairy products by applying the principles of HAACP and GMP; determine and execute the appropriate processing steps to assure that dairy products undergo desired chemical changes and become microbiologically stable; adapt and/or develop methods to analyze raw ingredients and finished dairy products chemically, microbiologically and sensorially; develop new economically and environmentally sustainable dairy products in an increasingly global context; conduct experiments on ingredients and dairy products, statistically evaluate and interpret the results to make inferences about the need for dairy processing applications.
